Bottle Your Kombucha & Water Kefir


This ain't hard it's easy, simple and your gonna love this.
Buy a 6 pack or 2 of Grolsch Lager beer, the ones with the bail wire gasket tops. Drink the beer, take the bottles and get them clean as best you can. Don't use soap unless they are really dirty and then use the orange or grapfruit seed oil cleaners if you have to and then get the soap oil residue out all of it; either way you will have to use white distilled vinegar, try the vinegar before the soap, the vinegar may be all you need. Put the bottles upside down to drain on clean new paper towels.
You now have to prepare the kombucha by first straining it through your plastic strainer, if you don't have a plastic strainer use a stainless steel one but try and use a plastic on and then you have to strain it again through a brown basket coffee filter. This will take out a lot of the active bacteria, this and the lack of air will stop most of the fermentation in the jar but the yeast continue to be active which is what we want because it means more bubbles!

Now pour your kombucha or water kefir almost all the way to the top of the jar. Add your flavorings. You can use many different types of fruits or spices and you can use them whole or jucied. Pieces of lemon or lemon zest, honey, stevia, goji berries, grapes, ginger and lots of it. Put them in and leave a little air in the neck.
Cap it with the wire bail cap. Age the bottles so they stand up. I don't want the kombucha or kefir to ever touch the bottle cap. And don't forget to use paper towels for the bottles to dry on, dish towels tend to harbor lots of foreign bacteria, don't use them. You have now set your kombucha or kefir up for aging.
Even if it is 2 weeks, you will love the difference, the bubbles and the taste. When you open the bottle you will be in for a surprise..... Enjoy
